An excellent substitute until our Spring vegetables arrives and can be served with any main course (Serves 6-7)
- 4 courgettes, diced
- 2 large red onions, chopped
- 1 garlic clove, crushed
- 1 green,1 orange & 2 red pepper, diced
- 225g/8oz baby vine tomatoes
- 4 tbsp rapeseed oil
- some chopped parsley
Pre heat your oven to 200C/Gas Mk6 Aga roasting oven
Put the rapeseed oil into a large roasting tin, heat for about 5 minutes before adding the onions, garlic, courgettes & peppers, season to taste with salt & black pepper and roast for 15-20 minutes.
Remove from the oven, add the tomatoes, give all the vegetables a good stir and bake for a further 15-20 minutes until the vegetables are soft and lightly browned.
A typical Dressing for your salad !
- 2 tsp honey, 2 tbsp white wine vinegar
- 4 tbsp orange juice, 6 tbsp olive oil
- 2 tsp wholegrain mustard
Mix all the ingredients well together in a screw top jar.
